Curried Chicken Divan

Ingredients

1 10-oz. pkg. frozen broccoli spears ( or equiv. fresh)

2 boned chicken breasts, split (4 pieces)

1 can cream of chicken soup

1/3 c. mayonnaise

1/2 t. lemon juice

1/2 t. curry powder

1/2 c. shredded cheddar cheese

1/4 c. soft bread crumbs

2 T. melted butter

Directions

Cook broccoli in lightly salted water until nearly tender (still crunchy).
Drain.
Arrange in bottom of greased 1 1/2-qt. baking dish.
Simmer chicken in a little water 30 minutes, until tender.
Debone.
Arrange chicken pieces over broccoli.
Blend next 4 ingredients; spread over chicken.
Make bread crumbs in blender (better than purchased ones) Sprinkle over chicken.
Drizzle butter over casserole.
Sprinkle cheese to cover lightly.
Bake in 350° oven for 25 minutes, uncovered.
To serve 8, use 10 breast halves, 3 packages of broccoli spears and double the sauce mixture.
Use a 13x9x2 backing pan.

Notes

This dish is also delicious substituting turkey for the chicken, especially holiday leftover turkey (I use only white meat).
